Hoog in de heuvels van Shakiso ligt het Dambi Uddo droogstation, waar zorgvuldig geselecteerde koffiebessen worden ingekocht van zo’n 100 kleine boeren uit de regio. In tegenstelling tot Latijns-Amerika, waar boeren vaak grote percelen bezitten met duizenden koffiestruiken, telen de meeste Ethiopische boeren hun koffie op kleinschalige percelen — vaak gewoon in hun tuin, tussen andere gewassen voor eigen gebruik.

Hoewel de gemiddelde boerderij 2,5 hectare groot is (groter dan in Colombia), is de aanplant veel minder dicht en gebeurt vrijwel alles in een bebost of half-bebost systeem. Dat zorgt voor een lagere opbrengst per struik en minder struiken per hectare, maar levert wel koffie op met een uitzonderlijke complexiteit.

Alle bessen die worden geleverd aan Dambi Uddo zijn volledig biologisch geteeld en worden bij aankomst gescheiden op sub-kebele (een lokale onderverdeling). Deze specifieke microlot komt uit het sub-kebele Bookkisa, binnen de Swana kebele.

Nestled high in the hills of Shakiso, the Dambi Uddo drying station sources only the finest cherries from around 100 smallholder farmers in the area. Unlike Latin America, where farms can span many hectares with thousands of trees, most Ethiopian farmers grow coffee on modest plots—often in their own gardens, alongside food crops for personal or family use.

While the average farm size is 2.5 hectares (slightly larger than in Colombia), the planting density is much lower and cultivation takes place almost entirely within fully or semi-forested systems. This results in fewer trees per hectare and lower yield per tree—but it also contributes to the unique complexity found in Ethiopian coffees.

All cherries delivered to Dambi Uddo are organically grown and sorted by sub-kebele upon arrival. This particular microlot comes from the Bookkisa sub-kebele, part of the Swana kebele.
