Johan Gutiérrez, a fifth-generation coffee grower of this family, who decided establish a processing center in La Esmeralda in 2018 with the aim of offering better prices to local producers. His vision included sourcing coffee cherries and implementing rigorous fermentation protocols to generate higher volume batches with consistent cup profiles. The process begins with the oxidation phase, where the cherries are left for 24 hours in an open system with controlled temperatures. Subsequently, pulping is carried out and the seeds are subjected to a 24-hour stage in the presence of various food-grade acids. After this period, a wash is carried out and the drying process begins.
During the first 7 days, the coffee is dried in the canopy, and later in a mechanical silo. This phase extends for the next 3-5 days, maintaining temperatures below 40°C and allowing rest at night.
